Cañihua is an Andean cereal of great nutritional value, with high protein content (essential amino acids) and fiber. It contains antioxidants: phenolic compounds, and due to its high protein content, it helps in the preservation or increase of muscle mass. Its origin is in the highland areas of Peru and it is primarily produced in the Puno region. Several historians trace its origin to the Tiahuanaco culture.
