After obtaining the cocoa paste or liquor, the next step is to press it, where we extract the highest percentage of fat converted into liquid. This liquid is then tempered and turned into cocoa butter. Our cacao butter is naturally pure, with no additives, and is not deodorized.

Our cocoa paste, also known as cocoa liquor, is processed after obtaining the nibs through grinding to produce the cocoa paste. This paste must be tempered and placed into molds.

Organic Criollo Cacao Powder

Our ceremonial Criollo cacao is harvested in Satipo, a region in the center of Peru, in the department of Junin. Our small producer partners, the Ashaninka from the Ene River, ensure the quality of Ecoandino’s organic criollo cacao.

Ceremonial criollo cacao is a variety highly valued for its unique flavor and aroma characteristics, and is considered a cultural and gastronomic treasure.

In addition to its cultural value, ceremonial criollo cacao also has health benefits due to its high content of antioxidants and other compounds that may help improve cognitive function and reduce the risk of chronic diseases.

After pressing the cacao paste, one fraction yields cacao butter in a liquid state, while the other fraction is compacted to produce "cacao cake" or "cacao press cake." This is then ground and sifted to finally obtain cacao powder. Our cacao powder is available in 10-12% and 20-22% total fat content.
